Moravian Sugar Cake

Not quite cake (though it’s a close cousin to coffee cake), and not quite bread (though it looks like a sugar-laden focaccia), Moravian sugar cake is perhaps most similar in spirit to cinnamon rolls.

This is my recipe for Moravian sugar cake. It is as if a coffee cake and a cinnamon roll had a baby, and then it turned into sweet focaccia. The secret ingredient in this recipe is actually a mashed potato, which keeps everything super tender, soft, pillowy, plush. And then you pour over this mixture of brown sugar and cinnamon, and then melted butter. That butter kind of seeps into those pockets and creates these little jammy bursts of spiced brown sugar as you bite into it.
