Original Plum Torte
First published in 1983, Marian Burros’s plum torte has become one of the most popular recipes in the history of The Times, and it’s no mystery why. There are so many things to love: It’s easy, it’s practically no-fail and it’s endlessly adaptable.
The Times published Marian Burros’ recipe for the plum torte for the first time in September of 1983. Readers loved it so much that we continued to publish it for seven straight years, until 1989, when the editors determined that enough was enough. However, because so many people wrote in, wrote letters and complained, they started running it again. One thing to note is that the size of plums has changed since 1983, so you may not need quite as many plums as the recipe called for. The top is crispy and the inside is tender, and the plums are juicy.
