This is a take on a classic dish from southern Italy that tosses pasta with toasted, seasoned bread crumbs called pangrattatto.
Spaghetti with garlicky bread crumbs and anchovies. This is one of these great, easy weeknight pasta recipes that you can make with pantry staples. You take an enormous amount of chopped garlic and some chopped anchovies, and just let them sauté in a little bit of olive oil until they smell fragrant. And you’re basically using the same amount of bread crumbs as garlic, which is how it should be. To make everything creamy, I build the sauce on egg yolks with a dash of fish sauce and then a little parsley. Toss it around until it’s nice and coated, and then that’s it. A squeeze of lemon for acidity. It’s just a joy to eat.
