Ingredients (serves 1)
For chicken
- 2 boneless skinless chicken thighs
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp oregano
- ½ tsp chilli flakes
- ¼ tsp black pepper
- Salt to taste
- Juice of ½ lemon
- 1 tbsp oil
For creamy cajun sauce
- 1 tbsp tomato paste
- 80ml skimmed milk
- Pinch of paprika
- Pinch of garlic powder
- Salt and pepper
For rice
- 100g cooked rice
- Coriander
- Lemon juice
For salsa
- ¼ cup finely chopped mango
- ¼ cup finely chopped cucumber
- 2 tbsp finely chopped bell peppers
- Coriander or parsley
- Lemon juice
- Salt and pepper
Method
- In a bowl, combine the chicken thighs with paprika, garlic powder, onion powder, oregano, chilli flakes, black pepper, salt, and the juice of half a lemon. Mix well and allow the chicken to marinate for at least a few minutes – more if possible – so it absorbs all the flavours.
- Heat one tablespoon of oil in a steel pan over medium-high heat. Add the marinated chicken and sear until cooked through and lightly charred on the outside. Remove the chicken from the pan and set aside.
- Using the same pan, add the tomato paste, skim milk, paprika, garlic powder, salt, and pepper. Stir continuously until the ingredients come together to form a smooth and creamy Cajun sauce.
- In a separate bowl, mix the cooked rice with freshly chopped coriander and a squeeze of lemon juice to brighten the flavours.
- Prepare the salsa by combining the chopped mango, cucumber, bell peppers, coriander or parsley, lemon juice, salt, and pepper. Toss everything together until well mixed.
- To assemble, add the lemon-coriander rice to a serving bowl, top with the charred Cajun chicken, spoon over the creamy Cajun sauce, and finish with a generous helping of the fresh mango salsa. Serve immediately and enjoy.
