- 1 large brinjal (baingan), whole
- 2 tbsp oil

- 2 tomatoes, chopped
- 5–6 garlic cloves, crushed
- 1-inch ginger, grated
- 2 green chillies, chopped
- ½ tsp cumin seeds
- ½ tsp turmeric
- 1 tsp red chilli powder
- 1 tsp coriander powder
- Salt to taste
- 2 tbsp chopped coriander
Instructions
- Grease the baingan lightly with oil. Roast on an open flame or oven until the skin turns black and the inside becomes soft. Cool and peel.
- Remove the skin and mash the roasted flesh smoothly. Set aside.
- Heat oil in a pan. Add cumin seeds. Add chopped onions and sauté until golden.
- Add garlic, ginger, and green chillies. Cook for 1 minute.
- Add chopped tomatoes, turmeric, chilli powder, coriander powder, and salt. Cook until the tomatoes soften.
- Mix in the mashed baingan. Cook for 6–7 minutes, stirring occasionally. Add fresh coriander and mix well.
- Serve warm with roti, paratha, or bajra rotla.
