This is chicken and rice dish makes for a striking one-pan meal thanks to the combination of saffron, pistachios and pomegranates. Baking the rice in this way will also give you tahdig (crispy rice) around the bottom and edges of the pan.
This is one of those dishes that feels super special, but is still quite comforting and rustic. The rice itself is super fragrant, thanks to the combination of cinnamon, cardamom and saffron. And baking it in this way means you get crispy bits of rice around the edges of the pan and softer bits through the center. The last thing you’re going to want to do is put together all the ingredients for the salsa: pomegranate, pistachios, herbs, lemon. Give it a good stir, and then just spoon it right on top and serve it directly from the pan.
