Döner, a staple street food across the Middle East and beloved the world around, gets a home-friendly remix in this recipe, which cleverly uses scrolls of parchment paper and a hot oven to achieve the hearty browning and thin slices you’d get from carving meat from a vertical spit.
When I first saw MezeMike’s döner kebab recipe on TikTok, I thought, ‘Wow, that’s a really smart way to make kebab at home,’ and found out it has the cutest backstory. Mike is actually from the U.K. He fell in love with a woman from Cyprus. He went to visit her parents and they made him this döner kebab, but at home. He absolutely loved it. It comes together really quickly and easily. Puree some onions and garlic. Add it to ground meat and thinly spread the mixture on the sheets of parchment paper before you roll it up into cylinders. Cooking it in a high heat oven this way allows the kebab mixture to get a chance to caramelize. Not as much as a vertical spit that you see in a kebab shop, but a pretty close approximation.
