I Can’t Believe It’s Not Chicken (Super-Savory Grated Tofu)
Grating super-firm tofu is one of the best party tricks in the kitchen. It makes tofu not only quicker to prepare (no pressing required!) but also deceptively meaty. The grated tofu is then pan-fried until golden and coated in a flavor-rich sauce.
This is my “I can’t believe it’s not chicken.” Super firm tofu is the ideal variety for grating, since it’s sturdy and dense and won’t fall apart. You’ll notice the tofu gets super chewy and the sauce just seeps into every shred, so it ends up really savory, a little spicy and garlicky, and almost takes on this ground chicken like flavor and texture.
