How To Make Puffed Rice Upma Recipe

Puffed rice upma, or Mandakki Upkari, is a traditional Karnataka breakfast that uses softened puffed rice, mild spices, and peanuts. The dish has roots in North Karnataka’s farming communities, where quick, light meals were essential. Its easy digestion and minimal oil make it suitable for a simple, everyday breakfast.

Ingredients (Serves 2)

  • 4 cups puffed rice (mandakki / kurmura)
  • 1 medium onion, finely chopped
  • 2 green chillies, slit
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon chana dal
  • 2 tablespoons peanuts
  • 8–10 curry leaves
  • ½ teaspoon turmeric
  • 1 tablespoon lemon juice
  • 2 tablespoons oil
  • Salt to taste
  • 2 tablespoons fresh grated coconut (optional)
  • 2 tablespoons coriander leaves, chopped

Instructions

  1. Rinse puffed rice in a colander under running water for 2–3 seconds.
  2. Squeeze out excess water gently and keep aside.
  3. Heat oil in a pan; add mustard seeds, urad dal, and chana dal.
  4. Add peanuts and fry until crisp.
  5. Add onions, chillies, and curry leaves; sauté until onions soften.
  6. Mix in turmeric and salt.
  7. Add softened puffed rice and mix lightly so it doesn’t break.
  8. Cook on low flame for 2–3 minutes.
  9. Turn off the heat; add lemon juice and coconut if using.
  10. Garnish with coriander and serve warm.
