How To Make A Delicious And Nutritious Sambar

Sambar recipe is a traditional South Indian dish made from toor dal, vegetables, tamarind, and spices. It is believed to have originated in Tamil Nadu centuries ago and later spread across South India. Each region prepares it differently, but it remains a nutritious, protein-rich dish enjoyed with idli, dosa, or rice.

Ingredients (Serves 4)

For the Dal:

  • 1 cup toor dal
  • 3 cups water
  • ¼ tsp turmeric
  • Salt to taste

For the Sambar:

  • 1 cup mixed vegetables (drumstick, pumpkin, carrots, beans)
  • 1 tomato, chopped
  • 1 small lemon-sized tamarind soaked in ½ cup warm water
  • 2 tbsp sambar powder
  • ½ tsp turmeric
  • Salt to taste

For Tempering:

  • 2 tsp oil or ghee
  • 1 tsp mustard seeds
  • ½ tsp cumin seeds
  • 2 dried red chillies
  • 1 sprig curry leaves
  • A pinch of hing

Instructions

  1. Wash toor dal, add turmeric and water, and pressure-cook until soft. Mash and set aside.
  2. In a pot, add vegetables, turmeric, and water. Cook until slightly tender.
  3. Add chopped tomatoes and sambar powder. Cook for 3 minutes.
  4. Squeeze tamarind pulp, strain, and add the water to the pot. Boil for 5 minutes.
  5. Add mashed dal to the pot. Stir well and adjust salt. Simmer for 8–10 minutes.
  6. Heat oil or ghee, add mustard seeds, cumin, red chillies, curry leaves, and hing.
  7. Pour the tempering over the simmering sambar.
  8. Serve hot with idli, dosa, steamed rice, or millet dishes.
