How To Make Authentic Pav Bhaji At Home

Ingredients
For the Bhaji
- 2 potatoes
- 1 cup of cauliflower
- ½ cup of fresh green peas
- 1 capsicum
- 2 tomatoes
- 1 onion
- 1 tbsp of ginger-garlic paste
- 2 tbsp of ghee
- 1 tbsp of oil
- 2 tbsp pav bhaji masala powder
- ½ tsp turmeric
- 1 tsp red chilli powder
- Salt to taste
- 1½ cups of water
- 1 tbsp chopped fresh coriander
- 1 tbsp lemon juice
For the Pav
- 6 pav buns
- 2 tbsp butter
- ½ tsp pav bhaji masala powder
Instructions
- Put the potatoes, cauliflower, and peas in a pot and boil them until they’re cooked through.
- Drain off the water and mash them a bit using a potato masher to break them up a bit.
- Get a pan and heat up the ghee and oil in it.
- Add chopped onion and fry it until it’s golden brown.
- Add a bit of ginger-garlic paste and fry for another minute. Add the tomatoes and cook until they’re nice and mushy. Then add in the capsicum and fry for another 2 minutes.
- Add some turmeric, red chilli powder, pav bhaji masala, and salt. Now add in boiled veggies and give it a good stir
- Then add a bit of water and just mash that mixture thoroughly.
- Let it simmer for 10-12 minutes on low heat, stirring it from time to time – you don’t want it to burn.
- Squeeze lemon juice and sprinkle over the coriander and mix it in.
- Take a pan or tava and melt a bit of butter in it.
- Sprinkle a bit of pav bhaji masala on that and place pav buns on top.
- Toast them until they’re nice and golden brown.
- Serve that bhaji hot with a bit of melted butter, some sliced onions, a squeeze of lemon and a sprinkle of coriander.
